This is just a throw together recipe and quantities of ingredients is up to you.
- Hot pepper
- Colored bell pepper (the more color the sweeter it is)
- Corn cut off the cob
- Red onion
- Lime (for flavor and to keep the avocado from browning)
- Salt and pepper to taste
- Black beans are optional
Cut everything up into desired size pieces (I like it small but not puréed small) squeeze 1 lime on to everything , season with salt and pepper. Stir together and enjoy with tortilla chips.
If you let it sit in the fridge over night the flavors will blend better but it’s great fresh made too.
